I no longer include in my "base carry":
    • FAK
    • Tape
    • Thumb drive (but do carry a microSD reader and can make do)
    • Pry Bar (Besides my P-38)
    • Spork
    • Ruler
    • Whistle
    • Sidearm (on work days, verboten)
But most of that is in my MOAB6 that I do add on most days when working or out of town. (It doubles as my lunch bag.)
On knives: I never carry a blade as a weapon. I do not know how to use it that way and would be more likely to arm my opponent. I do carry no less than 3 edged tools and up to 5 (except when flying). From food prep to "emergency" use, one or two get used daily.

Well, there's a huge list of stuff I don't carry.

I do have "layers" of carrying, though. There's what I has in my pocketses, and what I have in a small accessory bag I carry with me, what I carry in my work laptop bag, and what I have in my car. So I'm not sure which of these qualify as EDC in the truest sense. I only have the laptop bag on workdays.

Hard to really answer this because between my car and my bag I have pretty much all the bases covered that I care about.

This list is stuff I don't have with me at all, including car or bag.
    No whistles.
    No fixed-blade knives.
No keychain tools. (not counting Leatherman tools, which I do have).
    No watch.
No MP3 player or other portable media device.
    No carabiners.
No pill fobs or other mini-containers.

As far as on my person:
No weapons (tiny pocket knives don't count)
    No pencil
    No notepads
    No FAK
    No paracord
    No fire-starters or lighters

Of the above list, I do have something from each category in either my carry bag or my car.

    I don't carry a:
    Sniper rifle (too heavy)
Whistle (That is what a mouth is for)
Pocket prybar (because I don't have one, despite lusting after whatever mutation of the PMP that Eric has come up with)
Second pair of socks (seriously, I know a dude who is never without a second pair of socks in a bag)
Parachute (too heavy and big, not to mention they scare me to death)
    Murse (cause that's just wrong!)

Understandable? Hmmm, well I dunno if this is understandable, but I don't carry a Zippo lighter anymore. Instead, I carry a butane piezo lighter, preferably a Cricket brand if I can still find one. Much less hassle, and "lighter" too. However, over the weekend I did buy (at a garage sale) a very old silver engraved Zippo lighter for $2, so I may carry that awhile in addition to the Cricket. All the Zippo needed was a flint and a fill. I wonder how well a Cricket would work after 50 years of laying in a shoebox full of rusty junk?

Most people that want a widgy bar, but balk at the CC shipping generally source them through EOTR.

Was a moot point for me, since my order with CC was large enough and the prybars just piggy backed on the order. It was also before people started reporting shipping/customer service problems with CC.

The items I don't carry are simply because I hate feeling like I have a lot of items on my person. They're usually restricted to my Jean pockets and I hate feeling weighed down. I'm a big guy so it's hard to find places to put everything.

Pen - My favorite pen is a Pentel Energel. They aren't small enough to fit in a pocket discretly. I wish Fisher made a gel pen that worked the same as their space pen did.
Paper - I will eventually carry some paper, a moleskin probably, for now, the note pad on my iphone does the trick.
Water Bottle - I work from home, so water is all around. When i'm out traveling I rarely bring a nalgene for water (unless camping)
Firearm - I have no license, maybe eventually i'll have one in the house. Also no money for one. Not sure on my state laws
Multi Tool - I have a nice big gerber with all the bells and whistles. But it's too heavy to carry everyday. My SAK gets me by.

There are probably more. But that's what I thought of now.

Yes and how would you consider them to be "understandable?" How old do you have to be to carry explosives?

I don't carry doubles of anything. I'm swapping my EDC knife for a MT with a exterior accessible blade with a liner lock. Good enough. The only thing that I seem to have doubled up aside from bottle openers (they are on everything!) is flashlights. I carry a small flashlight as my EDC and I keep a headlamp in my EDC pack and a small solar fob on the exterior pocket of the same bag. I won't rely on the fob but its nice to be able to check the bag in light without bringing out my EDC. The tiny tape measure I included in my tool kit also has a built in flashlight but I don't consider it when I list the bags contents. It was the smallest tape measure I could find that was over 3' in length.
