Lansky system on my edc blades and kitchen utility knives. For my big kitchen knives I take them to a local sharpener.
I have an absurdly large collection of sharpening stones including a number of Japanese water stones and even two stones so fine they seem like slightly textured glass...something like 10,000 grit or better. I believe they are used sharpen razors. Scored the best ones at an estate sale.

An edge pro setup if I need to bring one back from the dead. For general upkeep, a ceramic rod and/or diamond pasted and plain leather strop paddles.
I use grindstones, in different levels of coarseness to put the initial edge/grind on, then a metal rod sharpener to maintain the edge, and a fine diamond impregnated stone to smooth the edge out.
if i had the money, i will pick up a spyderco sharpmaker right now i use a smith's pocket pal, cermaic/carbide along with a diamond tip for serrated edges, works well for my use
