    We had vegan Spaghetti Bolognese, which came with Hello Fresh. Never ever have I tasted so much desperation, sadness, disappointment, guilt, boredom, and shredded cardboard on one plate.

    Strictly speaking, as a food (bad word), it's al ragù. Not bolgnese. The real thing is awesome. The "bolognese" crap sucks

    TheMac - agreed. It's not sauce at all. it's closer, say, to pouring chili over rice.

    The formal name is Ragu alla Bolognese. It describes the dish and where it originated

    Yeah, I know. Just came from Hello Fresh as Bolognese, so I went with it. We’ve been watching Antonio Carluccio’s shows and have several of his cook books. He is very stern about Ragù. And you don’t use Spaghetti but Tagliatelle.

    Google translate from one of my favourite cooking's forums about ragù alla bolognese :

    INGREDIENTS
    1 small onion
    1/2 stick of celery
    1 small carrot
    150 g of minced bacon
    250 g of minced pork loin
    350 g of ground beef muscle (half folder and half scanello)
    1/2 glass of dry white wine
    1 glass of whole milk
    About 400 g of tomato sauce
    2 tablespoons of tomato paste
    extra virgin olive oil
    1 knob of butter
    coarse salt
    pepper

    METHOD
    Bolognese sauce is the basic preparation of some of the most famous dishes of traditional Emilia-Romagna cuisine, which have become icons of Italian cuisine tout court, such as tagliatelle and lasagna alla bolognese.
    For ragù, we mean a meat-based sauce, cooked slowly, over low heat, just like the Neapolitan ragù, which however chooses different cuts of meat and pieces, rather than minced.
    The preparation of this sauce is easy, it only requires time, care and of course, quality ingredients.
    The traditional Emilian recipe has been filed with the Bologna Chamber of Commerce, but in fact every family has its own recipe and there are many variations.
    On two things, however, everyone agrees: the minced meat of the Bolognese sauce must not be made from lean beef, but a mixture of pork and beef and slow cooking.
    This ragù is fantastic with egg pasta, but also with baked pasta, with cannelloni and the aforementioned lasagna,
    There are also "lasagna with vegetarian ragout" ... but that's a whole other story"-

    Best hint: come here in Italy to taste it :)

    Made a few smoked chicken quesadilla for dinner last night. Toasted the tortillas for a couple minutes on the pellet grill at 425, turned it down to 325. Spread a mixture of smoked, pulled chicken, cheese, green chilis, and taco seasoning on them. Topped mine with a few black olives. Grilled about 4 minutes per side until filling was hot. Didn't suck at all...
