So I saw this YouTube video with a folded thin piece of paper and you cut it while it sits there on a table. It’s taken me weeks of practice to get to this level and am quite proud of myself. Hope to get to a level where you can just glide the knife down and it cuts. Recently picked up a up a three sided stone and have been practicing on old butter knives will show my decent results with that. I think I really like it for a quick nice sharp blade for steak knives over setting up the lansky. Please demonstrate your knife sharpness test. Here is with a kitchen knife. My work knife.
