    Just received the Remington Baby Bullet. Compared to the Northfield it has a less finished blade i e not as high gloss[​IMG]

    Mirror finish is not for me. My preference goes to when you can see a very uniform grind. Like the ZT450 or the PM2.

    In theory, I agree. If that’s something that you’d really feel a lot? With machine tools, that has certainly a place. Maybe even with certain hand tools, like a plane. Maybe if you slice something sticky. Else I’d doubt that with a simple knife.

    Yes the cutting edge is most important. Some cutting task might even benefit from not having the mirror finish to cling to. The two knives having different finishes was just a surprise really as they are so similar in most things

    That’s a beauty. Specs please?
    My Miyabi 5000 MCD can’t keep up with that. Had some Aogami knifes, but I gave them up. Wife complained about the onions being rusty after cutting and I agreed.

    It's a 270mm yoshihiro yanagi suminigashi (damascus) kiritsuke (sword tip).
    It's white carbon. Total edge bevel is 11°, it's very very sharp.

    Really a beauty !.
    How do you keep it sharp and mantained ?
    I think it isn't easy to avoid oxid and rust, even if daily put in use, and being kitchen knives they can't be treated as other tools...

    I wash them constantly, as they're used to cut fish.

    I sharpen them every morning, with several grits of water stones. 1000, 4000, and 8000. Takes only a few minutes per knife.
    The yanagi only gets the 8000, it only cuts soft protiens for sashimi.

    Professionally you can designate a knife better, I guess. In a household a kitchen knife must take what you throw at it. Well, I got a handful of kitchen knives, but they still need to be versatile.

    At home, I use a stainless steel knife. It's still very sharp.

    Yup, mines are too. Mainly Kai Shun (affordable) and Miyabi (gifts).
