    I hope the D2 steel quality turns out well for you. Eafengrow hasn't had such a great track record.

    I'm not gonna send it off to a lab or anything, but I have a hardness tester at work and it checked 62Rc. So it may or may not be real D2, but it's definitely hard.

    It makes my ZT0300 feel like it's my ZT0452. It's HEAVY, like almost 10oz. But carrying it in jeans, I really don't notice the weight. And it feels really nice in hand. I have used it for everything from breaking down dozens of boxes from Christmas to slicing up a bunch of cheese and I still giggle a little every time I flip it open.:D

    I’ve got three Shuns (Chef, Pairing, Nakiri), but now I’m flirting with a Miyabi to replace my Eden Kanso Aogami Santoku. Aogami is great, but my wife seems unhappy when the onion cubes are brown after dicing. So I’m asking myself if the price difference between a Shun Classic and a Miyabi 5000 (125 EUR vs 285 EUR) reflects the quality difference. Or is this just the cult? Money is not really the issue, I just don’t want to overpay. Dayum, hard decision.

    My honest opinion, when you are in territory like this, the overall quality on both is very good. I personally feel it, it is no longer about performance but rather how much are you willing to pay? Do you enjoy one style/materials more so than the other? Finally, the name. You can't go wrong with either, when you get to price points like this, you have more of a right to be picky about the details
