Opinel Knives (Pics Welcome)

    An Opinel actually stands as an excellent choice for a food knife, and as a matter of fact stainless steel would be the way to go.

    I always went carbon for the Opinel, but some years ago I read where Opinel stopped using the French stainless steel and switched to the Sandvik 12C27. I bought one and tested it alongside my old carbon one. The stainless Opinel actually held an edge noticeably better than my old carbon. I switched to just stainless from then on.

    As for me, I'll keep using carbon Opinels more often than a stainless one. I almost never forget to touch my knives up before they get dull so I'm not worried about edge retention- I want maintainability of a very fine, very sharp edge. And I like patinas and carbon steels. The carbon Opinel uses patinas up nicely with my usage (my #8 blade is almost black now- it's a dark graphite grey and it's a natural patina) and gives me the very sharp edge with easy maintenance I like. I do like 12c27, just not in my Opinels :)
    As far as the patinas go, if you want a dark, even patina nothing beats cutting up a variety of citrus fruits and a few apples and letting the blade sit for a while before washing. That'll give you a medium darkness patina with some color (in my experience) and carrying the knife in your pocket in the heat of the summer (especially if you wear jeans or similar) will darken it up real quick.
    Yes, they swell... my Opinel was loose enough to easily open with one hand during the dry winter, but in the humid Kentucky weather we're having now my 8 has tightened up quite a bit. I haven't tried to open it one handed since the humidity started rising, but I'll guarantee it's harder and slower now...

    Very easy. Buy another one while the wet one dries in the sun. Simple.

    Antithetik that's a very nice one. But I still like the wooden ones so you can carve the handle. And what about the ones with exotic wood. Those are also very beautiful.

    Here is my little baby Opi with it's big brother Kukhri. I've had it for going on 15 years and although it doesn't get that much action now I love it dearly. Unfortunately because it has a 'lock' it's illegal to carry here in the UK. I love the carbon steel blade, I love how quickly it gets sharp and how sharp it gets (hair popping!)

    I've been thinking about buying some kydex myself and do my own sheaths. But I've never tried it before. Would be nice if it worked out.
