I'd like to find one that's low profile, high quality, and slick of any velcro patches. Ideas?
TAD gear field cap, or some of those well known 5.11 downrange hats, maybe?
By low-profile you mean a hat/cap which is conspicuous in appearance or riding low above the ears?
Ya know, no "billboard" style caps.
How those two I suggested fit your requirements?
Alternatively you can go for one of those no name $5.99 "tactical" or "operator" hats and remove (pick the threads out) the Velcro patches. That's what I did on two of mine and couldn't be happier.
Or buy any hat at all and remove the top button...
Hazard 4 logo cap, any day, also comes in black. By far my favourite cap of all time.. been through flexfits, condor, refactor tactical operator caps this just has the nicest fit, its a bit lower cut than flexfits and other caps so you dont get that "trucker look". The color on the picture seems abit too vivid or satuated.. its more of a brown/gray sandstone color. fits well in an urban enviroment and the logo is a great design imo.
also comes in black, has very minimal velcro on the back for name tag. It has a super comftable rim unmatched by others. and no i did not get paid to write any of this, but i love this cap and have been wearing it every day for the last year.

I tried that too...it works on some hats and doesn't on others...leaving a nasty mark (mess) under the button. Not all caps section threads are finished well under the button.
Arc'teryx B.A.C. Cap. It does have a velcro field, but their logo is embroidered into it, so it passes decently as slick by my terms.
I'm taking a look at the 5.11 hats and the TAD gear hat right now...
is walking around with "TACTICAL GEAR" emblazoned on your head very low profile?
LOL. You know what I mean, no patches, insignias etc. I like ball caps, I just can't stand that huge billboard front they have that says hey, look at my gigantic forehead.
Go to your nearest lids and pick your color of choice plain hat and voilà

By definition, "operator" caps have a loop field to which the "operator's" unit/organization patch can be affixed.
You're looking for a ball cap. See Epilektos' post.
If you really need an "operator hat" look at tactical tailor. Their hats are well made. They make blank, American flag and Logo hats that only have a small Velcro patch where the hat button would normally be.
Lids is still the best advice though, IMHO
Arc'teryx also makes the B.A.C without velcro.
Marmot cap got them in blue and black.
So what was the cap you went for in the end, KDOG08?
I think you and I have similar tastes when it comes to outdoor/tactical caps, nothing 'loud' and in your face and the less insignia the better.
Here's few of mine, below. I am really into earthy colors, though. Hope it helps.
Left to right - 2 x 5.11, T.A.D, Under Armour, Helikon.
I have a TAD cap in O/D and it is very comfortable, subtle and hard-wearing thus far.
I must say, TAD is slowly bankrupting me...
I have a few, one from GORUCK and two from Vertx. Both are sturdy, well made and comfortable but the slight edge goes to Vertx IMO.
This one by SCOTTEVEST works well. It is real durable (unlike the pants they sell) and has a couple pockets that make it kind of neat.
You can get this hat without the logo although the logo is not very intrusive or conspicuous.
