i used a friends opinel not to long ago while wearing pretty thick leather gloves and it was very easy to open, lock, unlock, and close. usually with gloves the hardest part for me is trying to release the liner lock. since an opinel just has that rotating lock it makes it very easy to use. also i was thinking that if you were having a hard time grabbing the blade to open the knife you could sand a finger slot out of the handle to create a larger surface area to hold onto the blade.

A couple things make it easier. One to modify it like this:
Sorry, I don't have a picture of it closed. But the little easy opening notch makes a huge difference.

Also, learning the Opinel wack helps. Hold the knife by the pivot and wack the butt on something hard, like the take or your leg. The tip should come out a bit and make it easy to grab. Even one handed. :)

I took the lock ring off mine and tightened up the pivot a bit, then replaced the lock ring. I usually just use it like a friction folder, only using the ring if absolutely necessary.

Hope this helps. I love the awesomeness that are Opinels.

+1 to this, I believe the spydie hole on these were designed for being opened with gloves on. That being said, it all depends on the glove, I can open and close mine no problem with a pair of insulated mechanic style gloves on.

How about a ZT with flipper and assisted opening?
You apply a moderate pressure on the flipper and the knife pops opened.
My ZT350 is like this and it's very easy to deploy even with gloves on...

I would say a Svord Peasant / mini P would be 2 of the easiest as friction folders. If you want serrations they are cheap to replace so just cut some into the blade and sharpen it up. Real simple to modify to fit any outdoor/indoor working needs, gloves and all.

Anything with a flipper is easy. My ZT0350 can be opened with gloves and my non dominant hand if needed!

For two hand opening, there are many options, but the only knives I have any experience opening with gloves on are a Delica, Native, Buck 110 and Vantage. All opened easily two handed, but one handed depended on how thick the gloves. However, I did manage to open the 110 one handed using the Spydie drop.
